Fiber Plus Bars



I give my Mom credit for these bars full of yummy goodness. Now, I'm not a huge Almond fan so I went with these:



They are only 1 point for the WHOLE bar...and it's a decent sized bar too. I'm sure it due to the 9g of fiber in them, but it's a tasty low point snack none the less. The only thing better than pulling one of these out of the pantry....pulling one out of the refrigerator...mmmmmmm. Go out and pick some up today. You can even go here to print a coupon. Eating fit and saving money - gotta love it!!!

Laughing Cow cheese spread



First off, to quote Rachel Ray "Yum-O".

We first tried the Laughing Cow spread at Fareway when we started our big shopping trip. They had it as a sample with some pretzel chips and boy was it good. We each bought the light version of the swiss.

I've been mainly using it on celery for a nice snack, but I know my Mom has been using it on some wheat thins crackers. In each container is about 8 wedges individually wrapped. A single wedge is only 1 point. I highly recommend picking some up for a low point snack.

Chicken Breast with Honey-Balsamic Glaze

Chicken Breast with Honey-Balsamic Glaze
POINTS: 4
INSTRUCTIONS

1 1/2 tsp dried thyme
1/2 tsp table salt
1/4 tsp black pepper
1 tsp olive oil
1 pound(s) uncooked boneless, skinless chicken breast, four 4-oz pieces
2 tbsp balsamic vinegar
2 tbsp honey


Combine first 3 ingredients; sprinkle over both sides of chicken.

Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 7 to 8 minutes on each side or until chicken is done.

Transfer chicken to a platter; keep warm. Reduce heat to medium-low; add vinegar and honey to pan. Simmer 1 minute or until glaze thickens; stir constantly. Pour glaze over chicken. Yield: 4 servings (serving size: 1 chicken breast half).


Notes:
I made this last night and both my Husband and I loved it. I think he was a little hesitant at first because of the slight vinegar smell, but once he had a taste he really liked it. I had a good amount of points left by the time dinner rolled around so I did have 2 servings (about 8oz) and when I logged it into WW online it came up at only 7 points for the 2 (4 points for 1) just a little FYI. I had some steamed broccoli on the side and a piece of 12 grain bread....mmmm, so yummy - we'll be having this again.

Welcome to our "We're losin it" blog. We are 2 sisters and a Mom who started a journey together to eat healthy, lose weight and grow in our relationship. Each week we get together and plan our meals, grocery shop and portion out all we can to make sure we stay on track for the week. This blog is mainly for us to check in with each other, root each other on and have a central location for all our "tips".

We started Weight Watchers on Monday, April 6th. This first week is kind of a practice week as we really didn't plan out any meals, but did portion out several items to get us started. We each have our starting weight, our set of goals, our point allowance, and the desire to not let food run our lives anymore.
